The Bite:
Like it raw? It's not so hard...if it's sushi from West Seattle's Mashiko. The cozy sushi bar's made the switch to 100% sustainable seafood. Pick from spot prawns, salmon, and sea urchin from Alaska/Canadian waters, and albacore tuna from the PNW coast for our fave Red Violin Roll (tuna, avocado, cilantro, and spicy garlic sauce). Due to overfishing, bluefin tuna, Japanese amberjack, and eel have been axed from the menu and replaced with equally delish Hawaiian Kona Kampachi, black cod, and catfish - which'll last a long time.
Why Care?: 
Scientists predict that most of the world's edible seafood will be gone by 2048 due to unsustainable fishing practices; among the species most at risk: sushi-bar favorite bluefin tuna.
Grab one of the seven highly coveted seats at the bar, and put your palate in the sushi chef's hands for his omakase.
